Soup: Black Bean Instant Pot Max®

YIELD 4 to 6 servings

INGREDIENTS

1.5 cups (10 oz) dried black beans, rinsed
5 cups veggie broth
2 tbsp vegetable oil

BOWL:
1 small onion, cut into 1/4-inch dice
1/2 red bell pepper, seeded and cut into 1/4-inch dice
1.5 tsp chopped garlic
1/2 tsp finely chopped seeded jalapeño pepper
1.5 tsp dried oregano, crumbled
1 bay leaf
1/2 tsp dried thyme, crumbled
1 tsp ground coriander
1 tsp cumin

PREPARATION

1. Set SAUTE to HIGH and heat up oil. Add BOWL and cook, stirring, until soft.

2. Add broth and beans: MAX : 45 minutes : Natural Release

3. Serve as is or purée with immersion blender.
